TEXTURES OF CAULIFLOWER | I simply love the inner beauty of cauliflower, its architecture looks like an ice crystal. I photographed the stem and the leafs as well, for they aren't waste. You can bake the leafs in the oven or braise them in beurre noisette (burnt butter). Or create an all white plant-based winter carpaccio with thin slices of the cauliflower stem, a (Granny Smith) apple, daikon or another type of radish and white beetroot. Please don't forget to cut away the woody outside of the stem before creating thin slices using a mandoline.
